CHARIS & DANIEL'S special day

In July of 2021 we had the honour of being part of Charis and Daniel’s dream day. This incredible wedding was brought to us by the wonderful Studio Sorores, and we worked with the couple over the course of two years. Charis and Dan were looking for a bespoke food journey, using local ingredients and incorporating ingredients from the family’s greenhouse.

This special day was the epitome of elegance, personal touches and attention to detail. From bespoke menus to individual booklets detailing the locality of the food, personalised napkins that double as favours for guests and wine & champagne pairings for each course.

The four course wedding breakfast began with Zero Waste Fermented Orange, Whipped Ricotta, Shaved Parmesan, Radicchio and Lemon Balm to get the palates amused, before moving on to White & Green British Asparagus, Mustard Seed, Chive Purée, Parmesan and Truffled Egg Yolk; paired with a delicious glass of Bouchié Chatellier, 2018. A main course of Hereford Beef with Potato Dauphinois, Tenderstem, Horseradish Butter and Bearnaise Sauce for the omnivores, or Roasted Fennel, Smoked Courgette Flower, Heritage Kale, Potato, Black Olive and Zero Waste Herb Oil for the plant-based guests; washed down with De Alto Amo Rioja, 2011. Following on for dessert was a Kataifi Pastry, Spiced Garden Peach Compôte, Rhubarb Gel, Whipped Marscarpone & Hereford Honey; paired with the similarly honey-like Grand Tokaji Aszu 5 Puttonyos, 2013. A meal, and a day, to remember for a life time.


The Highlights

After 2 years of planning (including the bride and groom having to postpone the wedding due to covid) it was an absolute pleasure laying the table, after months of tableware discussions. We used vintage lace crockery from Duchess & Butler and Mother of Pearl cutlery from Options Greathire.
