Recipe: Turmeric and Blueberry Porridge
A great breakfast sets you up for a great day. This turmeric and blueberry porridge recipe is full of antioxidants, and is a lovely, cosy recipe to warm you up these chilly winter mornings. Perfect with a cuppa, or if you’re being really healthy some hot water and fresh lemon. Delicious.
Makes 4 bowls
Ingredients:
100g porridge oats
500ml almond milk
1 tsp turmeric
Pinch of salt
1 tsp maple syrup, to taste
1 punnet fresh blueberries
Porridge topping:
1 tsp toasted chia seeds
1 tbsp dried blueberries
1 tbsp puffed quinoa
1 tbsp toasted oats
Method:
- Place the oats, milk and turmeric in a pan over a medium–low heat, stir continuously for 5-10 minutes until the oats have softened and soaked most of the liquid. Add more milk until you reach the correct consistency and texture.
- Season with a pinch of salt and maple syrup.
- Pour into a bowl and finish with the porridge topping mix, a swirl of maple syrup and a handful of fresh blueberries.
