Peach & Basil Spritz

This Peach & Basil Spritz is a celebration of high summer, when British gardens and markets are brimming with fragrant basil and stone fruits at their peak. We love using ‘nearly ripe’ peaches or nectarines for their delicate sweetness and firm texture, perfect for muddling into drinks. For the fizz, we recommend Rathfinny’s elegant English sparkling wine to elevate this seasonal spritz and though if you prefer, you can skip the vermouth for a lighter, more aperitif-style serve. Fresh, herbaceous, and effortlessly refreshing, this pitcher cocktail is ideal for long afternoons in the sun.

  • 1 Big Bunch Basil (Washed & Dried)
  • 2 ‘Nearly Ripe’ Peaches/Nectarines
  • 400ml English Sparkling Wine
  • 250ml Sweet White Vermouth (optional)
  • 200ml Soda Water
  • Ice
  1. Remove the stone from your peaches & slice into thin wedges, add 1/3 to a jug with a few sprigs of basil & muddle.
  2. Add the sweet vermouth & mix together until just combined. Add ice & the remaining peach slices & basil leaves in layers to create an attractive cocktail.
  3. Finally, pour over the sparkling wine & soda water & use a long spoon to stir to combine.
  4. Pour into glasses filled with ice & garnished with a basil sprig & peach wedge.
