From seasonal gluts to sustainable seafood, each month our Sustainability and Social Impact Manager, Rosie, spotlights a few simple ingredient swaps that make a big difference. This month, she’s leaning into festive flavours and winter abundance with three planet-friendly alternatives to consider as you plan your dinner party dishes:

1. Swap beef for wild venison

If you’re looking for a rich, wintery alternative to beef, wild venison is a brilliant choice. Not only does it lend itself beautifully to Christmassy dishes, but it also carries strong sustainability credentials. With no natural predators in the UK, deer populations must be managed to prevent damage to woodlands and biodiversity. Choosing wild (not farmed) venison supports this essential conservation work while offering a delicious lower-impact protein.

2. Choose ChalkStream trout over smoked salmon

Smoked salmon may be a seasonal favourite, but its environmental impact – particularly when farmed intensively – makes it worth seeking out alternatives. We love using ChalkStream trout, a wonderfully delicate and sustainable option that still feels celebratory. Rated a “best choice” by the Good Fish Guide, it’s a standout swap for festive canapés, brunch dishes or elegant starters.

3. Make the most of seasonal apples and pears

UK apples and pears are at their very best right now, so it’s the perfect moment to celebrate them in comforting winter desserts. Think pear frangipane tarts, apple compotes or a simple crumble. And if you’re making something berry-based, like a classic apple and berry crumble, opt for frozen berries rather than fresh. They’re just as delicious, often picked at peak ripeness, and avoid the emissions associated with airfreighted out-of-season fruit.
