(Makes 4 portions)
INGREDIENTS
- 100g porridge oats
- 500ml almond milk
- 1 tsp turmeric
- Pinch of salt
- 1 tsp maple syrup, to taste
- 1 punnet fresh blueberries
Porridge Topping:
- 1 tsp toasted chia seeds
- 1 tbsp dried blueberries
- 1 tbsp puffed quinoa
- 1 tbsp toasted oats
METHOD
1. Place the oats, milk and turmeric in a pan over a medium–low heat, stir continuously for 5-10 minutes until the oats have softened and soaked most of the liquid. Add more milk until you reach the correct consistency and texture.
2. Season with a pinch of salt and maple syrup.
3. Pour into a bowl and finish with the porridge topping mix, a swirl of maple syrup and a handful of fresh blueberries.
