Recipe: Jackfruit Tacos
For those doing Veganuary, these jackfruit tacos are a delicious meat free alternative and a great way to showcase how yummy vegan dishes can be. This is a Social Pantry party favourite from our banging taco station menu and goes perfectly with a Margarita!
Serves 4
Ingredients:
For the tacos:
1 can, green jackfruit in water or brine, drained, rinsed and cut into thin long slices
1 small onion, thinly sliced
1 tsp chili powder
1 tsp cumin
1 lime, juiced
150ml water
Flour or corn tortillas
Salt and pepper
Coriander for garnish
For the salsa:
1 avocado, smashed
¼ red onion, finely diced
½ red bell pepper, finely diced
1 tbsp jalapeño, finely diced
1 tbsp chopped coriander
1 tbsp chopped mint
½ lime, juiced
Salt and pepper
Method:
- First, make the taco filling. Sauté the onions in oil until translucent, roughly 6 minutes.
- Next, add the jackfruit followed by the chilli powder, cumin, lime juice and water. Cover and simmer for about 5 minutes.
- Once the jackfruit has softened, shred using two forks or cut into strips. Season with salt and pepper to taste.
- Make the salsa by combining all the ingredients together, season to taste and build the tacos.
- Serve on a gorgeous plate and encourage your guests to get stuck in!
