Recipe: Jackfruit Tacos

For those doing Veganuary, these jackfruit tacos are a delicious meat free alternative and a great way to showcase how yummy vegan dishes can be. This is a Social Pantry party favourite from our banging taco station menu and goes perfectly with a Margarita!

 

Serves 4

Ingredients:

For the tacos:

1 can, green jackfruit in water or brine, drained, rinsed and cut into thin long slices

1 small onion, thinly sliced

1 tsp chili powder

1 tsp cumin

1 lime, juiced

150ml water

Flour or corn tortillas

Salt and pepper

Coriander for garnish

 

For the salsa:

1 avocado, smashed

¼ red onion, finely diced

½ red bell pepper, finely diced

1 tbsp jalapeño, finely diced

1 tbsp chopped coriander

1 tbsp chopped mint

½ lime, juiced

Salt and pepper

 

Method:
  1. First, make the taco filling. Sauté the onions in oil until translucent, roughly 6 minutes.
  2. Next, add the jackfruit followed by the chilli powder, cumin, lime juice and water. Cover and simmer for about 5 minutes.
  3. Once the jackfruit has softened, shred using two forks or cut into strips. Season with salt and pepper to taste.
  4. Make the salsa by combining all the ingredients together, season to taste and build the tacos.
  5. Serve on a gorgeous plate and encourage your guests to get stuck in!
