Fish Finger Sandwich

No one can resist a fish finger sandwich… especially this one which is packed full of flavour and with your own homemade tartar sauce. Give it a go, you won’t be disappointed!

(Serves 2)

 

Ingredients

200g cooked peas

1 lemon, zest

1tbsp crème fraîche

2tbsp chopped mint

6 fish fingers

4 slices of ciabatta or sourdough bread

Maldon sea salt

Cracked black pepper

 

Tartar Sauce

1tbsp capers, chopped

1tbsp cornichons, chopped

1 lemon, zest

1tbsp lemon juice

 

Method

  1. In a small mixer or using the back of a fork, crush the peas and mix with the ingredients.
  2. Cook the fish fingers until brown and crispy.
  3. Make the tartar sauce by mixing all of the ingredients together.
  4. Season to taste.
  5. Toast the bread and build the sandwich.
  6. Enjoy!
